A Tribute to ‘Les Pesqueres’

For the 2023 season, BonAmb Restaurant unveils a captivating theme – ‘Les pesqueres,’ the ancient fishing spots that once dotted the Marina Alta coastline. These singular fishing locations were used by villagers, known as ‘encesers,’ who descended to their treacherous fishing nets using wooden and rope ladders. Under the cover of winter nights, they harvested prized catches like bream, grouper, cuttlefish, squid, and octopus.

BonAmb, whose name translates to “Pleasant environment,” has stayed true to its mission since opening in 2011. Beyond serving delectable dishes and drinks, the restaurant creates an unbeatable atmosphere for its guests. It’s a place where tradition and culinary history of Jávea and Marina Alta are brought to life in every bite, a journey from the past to the present and into the future.

The Culinary Artistry of Alberto Ferruz

Central to BonAmb’s success is Chef Alberto Ferruz Moraleda, whose culinary journey began at a tender age. Trained under the mentorship of renowned chefs, including Martin Berasategui in Spain and ‘Taillevent’ in Paris, Ferruz brought his expertise back to Spain, eventually joining BonAmb. His relentless pursuit of perfection earned the restaurant two Michelin Stars and three Repsol Suns.

Pablo Català: A Local Connection

Pablo Català, the maître d’hôtel, is deeply connected to the local cuisine of Jávea. His passion for gastronomy was ignited by childhood memories of local stews, fruits, and fish. After working in different countries and gaining extensive experience, he joined BonAmb, forging a partnership with Alberto Ferruz. Their collaboration has elevated BonAmb to its current heights.

The restaurant’s location in the picturesque northern part of Alicante provides access to high-quality, sustainable ingredients, from ecologically grown fruits and vegetables to fresh seafood from local auctions. Craftsmen from Jávea contribute traditional elements to the restaurant’s décor, creating a unique ambiance.

BonAmb offers three exquisite menus, each a culinary adventure of its own:

  • ‘La Taula’: This menu, starting with appetizers, features 7 courses in total and a sweet finale, priced at €115.
  • ‘Els Testos’: Delight in a journey of 9 courses, including appetizers, followed by a sweet moment, available for €155.
  • ‘La Catedral’: For the ultimate dining experience, savor 11 courses, including appetizers, and a sweet finale, priced at €185.

Guests can also opt for wine pairings to enhance their dining experience.
